10 Minute Black Bean Udon



Ever need to go to the grocery store & stand there staring, trying to figure out how you'll ever throw together a healthy meal with a few random ingredients? Yea, me too!!! This Black Bean Udon is not only delicious, it's quick and moderate calorie for a noodle dish!!

This recipe is super quick, about 10 minutes to make! The recipe is for one serving, but you could easily increase for more than one serving or decrease to bring down calories & serve with salad.


 

Ingredients

  • 1 serving frozen Udon noodles (I got mine from Asia Royal Grocery)

  • 1/4-1/2 cup black beans (drained & rinsed)

  • Pre-chopped veggies of choice (I used this Super Blend from Walmart)

  • 1 TBSP Sesame Chili Oil

  • Sauces/Seasoning: chopped garlic, low sodium tamari, umami, rice vinegar, black sesame seeds, miso paste

How to Make Black Bean Udon


  1. Cook noodles according to package. Mine: Boil water, add noodles, boil 1 minute.

  2. In skillet, heat 1 TBSP oil and add chopped garlic

  3. Once oil & garlic are heated, toss in veggies. Drain & rinse beans, add 1/4-1/2 cup beans.

  4. Add seasonings of choice (I used miso paste, umami, rice vinegar)

  5. Allow veggies & beans to sauté until tender.

  6. Reduce heat. Toss noodles into veggies & beans, add tamari. Allow to cook until noodles are coated.

  7. Top with black sesame seeds & enjoy!

Hopefully you enjoy this super simple Black Bean Udon recipe when you are looking for something quick, easy & delicious! This whole meal has about 548 calories but could easily be decreased by choosing Shirataki noodles in place of Udon or using an oil spray in place of the oil!
